Recipe of the Month: Avocado Summer Salad
1 tomato,
finely diced
2 cups of spinach
1/2 cup of purslane
1/2 cup of mix greens
1/2 cup of shredded carrots
1 small garlic clove, finely diced
2 tablespoons of olive oil
1 large avocado
1/4 onion, finely diced
juice of 1 lime
about 10-12 crushed almonds
Directions
-Prepare the spinach
-Add shredded carrots, mixed greens and purslane
-Mix and set aside
-Finely dice tomato, onion and garlic glove
-Mix diced mixture with a large avocado, smash into a puree
-Add 2 spoons of olive oil and lime juice, mix with a fork
Pour the
finished purée over the previously prepared green salad, and
finally add the crushed almonds.
Preparation
time: 15 mins.
